Savoury Pancakes – paleo, keto and lectin free

These pancakes were so easy to make… you can make them sweet or savoury, I prefer mine savoury with some homemade guacamole. You can be very creative here and switch up your toppings, nut butters and hot berries are also a super delicious option for a sweet treat. They are high in good fats, and so a great recipe for those following a ketogenic lifestyle. They are also dairy and gluten free! I have struggled to get a pancake recipe that doesn’t produce soggy or gritty pancakes, and this recipe came out perfectly….

Ingredients (serves 1)

  • 1 tablespoon extra-virgin olive oil or macadamia nut oil
  • 1 tablespoon coconut oil – melted
  • 1 tablespoon coconut flour
  • 1 tablespoon almond flour
  • 1 tablespoon water
  • 1 large egg
  • 1/2 teaspoon baking powder (gluten and aluminium free)
  • Pinch sea salt
  • savoury: pinch of dried herbs or sweet: stevia

Method

  1. Place all ingredients into a bowl/mug and beat with a fork
  2. Heat a teaspoon of coconut oil in a not stick pan.
  3. Pour the batter into the hot pan, into small round pancakes. Note: if the pancakes are too big then they can be difficult to flip, and so keep them small
  4. Fry until golden brown on each side
  5. Serve with your choice of toppings
