These pancakes were so easy to make… you can make them sweet or savoury, I prefer mine savoury with some homemade guacamole. You can be very creative here and switch up your toppings, nut butters and hot berries are also a super delicious option for a sweet treat. They are high in good fats, and so a great recipe for those following a ketogenic lifestyle. They are also dairy and gluten free! I have struggled to get a pancake recipe that doesn’t produce soggy or gritty pancakes, and this recipe came out perfectly….
Ingredients (serves 1)
- 1 tablespoon extra-virgin olive oil or macadamia nut oil
- 1 tablespoon coconut oil – melted
- 1 tablespoon coconut flour
- 1 tablespoon almond flour
- 1 tablespoon water
- 1 large egg
- 1/2 teaspoon baking powder (gluten and aluminium free)
- Pinch sea salt
- savoury: pinch of dried herbs or sweet: stevia
Method
- Place all ingredients into a bowl/mug and beat with a fork
- Heat a teaspoon of coconut oil in a not stick pan.
- Pour the batter into the hot pan, into small round pancakes. Note: if the pancakes are too big then they can be difficult to flip, and so keep them small
- Fry until golden brown on each side
- Serve with your choice of toppings
