Flaxseed “Oatmeal”

When following a grain free diet, a warm bowl of porridge does not have to be a thing of the past. I have come up with a warm, creamy porridge recipe that is grain free/paleo and lectin free. I personally have this porridge a few times a week. I absolutely love it on a cold morning, and it really is a bowl full of comfort, especially for those of you that love your oatmeal in the morning. It is super easy to make and takes about 5 minutes to cook…

 

 

Ingredients (serves 1)

  • 4 tbsp. flaxseeds
  • 4 tbsp. coconut flakes
  • 1/2 cup organic coconut milk
  • 1/2 cup fresh or frozen berries
  • 1/2 banana – sliced
  • Pinch of cinnamon
  • Stevia/xylitol to taste (optional)

Method

  1. Heat coconut milk, berries and banana in a small pot on the stove until soft. If using frozen berries, make sure that they are fully thawed or you might be chewing on chunks of frozen fruit!
  2. Add flaxseeds, coconut flakes, and cinnamon. The flaxseeds become quite gelatinous here. Stir on medium heat until the porridge thickens.
  3. Serve with (optional) added fresh berries, almond flakes and stevia/xylitol. You may want to add some extra coconut milk if the porridge is too thick for your taste.
